They take a sheet like we usually put on top and they put like 100 pinholes in it. Then they put a spacer, about 1cm tall, on top of that and cover it with another sheet of foil. that top foil is poked with holes of the size we are used to. What's the deal? Anyone know of the benefits that could be associated with preparing the bowl this way? and are they using bbq charcoal?
