From experience I can say that the smoke doesn't differ between a single-piece and a multiple-piece shaft, unless it is not properly connected and not airtight. I believe that the cleaning and transport advantages of a multiple-piece shaft are important and something I appreciate in a hookah.

a solid one piece shaft will be probably be the best choice if you don`t transport your hookah alot, simply because there is less chance of getting an airleak.
sometimes the threads will wear out on stems that you can unscrew.

the chances of getting leak in a multiple piece shaft is that much higher than getting a leak in a solid one piece shaft. If it is your first pipe i would suggest the solid one piece.
