How To Keep Tangiers Running Smooth

So i was smoking horchata one night and peace iced tea the other, and i noticed that after an hour it just starts to taste burnt. i move coals every 30min, use exotica quarters. what do you all think? move the coals more frequently, or am i just picky.

For me I have a medium Phunnel and I use thirds. Use 2 of them and place them parallel on each side of the bowl. The next set, place the other direction. After a while you will be able to just put them there like EternalSoil mentioned. I had to take my second set off today for a little, it got really hot. That was the first time for me. No burn though, I caught it in time. I find also it helps to have a ceiling fan running on low as well if you got one.

make it tight so its flat.. then some big holes and then plop on some coals.. it all depends on the size of your bowl on how many to use
