Use as many as it takes for good taste/smoke density. Try putting 2-3
spread out all around the bowl, and if it gets to harsh and starts
burning, take some heat off. If you're not getting a lot of flavor or
smoke, try putting some more heat on.

Coals will vary from each other, and I have never used the Japanese
coals before, but don't worry, smoking is not rocket science, and you
should be able to use any brand of coal by using the method I mentioned.

The only thing I can recomend for smoking with anytime of coal, try to
keep the spread out around the edges of the bowl. If you place coals
right in the middle, it tends to burn  a lot easier. But then
again, a lot of people who use quicklight round discs like to plop one
right in the middle, but for natural coals (especially fingers), its
better to keep the around the edges.

All  I use now regularly  is  Japanese coals. They are
really dense compressed charcole that comes in sticks of four. A local
market sells them for $7 for a box of 96. I used to use golden quick
light coals but I enjoy the Japanese charcole more. They last a little
over an hour for me and give off zero flavor, smoke, and don't shoot
embers. The only tricky thing about them is they need quite a bit of
heat when lighting them. I use a normal propane torch and heat them on
both ends, they light in a snap this way. I always keep two lit on the
bowl and get great smoke. With a stick of four I can go 2 hours or more
of nice solid smooth smoke from a good brand.

I really enjoy them.
