ryno
Brass is ideal. Try going to Lowes and check in the toliets plumbing section, I found the perfect downstem for a hookah...http://www.hookahforum.com/?showtopic=23274#entry276535 - theres a pic of it inside an old stem. Unconnected
Brass is a not a good metal. Brass is bad for so many reasons. Stainless Steel is the best way to go, but its $$ . Diffrent grades of the Stainless steel would probley not make a diffrence in taste so much as the manufaction process. Brass bad... Aluminium could work too, it's cheap light weight and depending on what type you get almost as strong as brass. And oh yeah Brass is bad.

Unconnected
I guess Brass is not all bad it's just in my eyes not as good as other metals, it's harder to tap,the dust can slip past your safty glasses and it's hard to get out of your eye. People seem to love it and yeah just casue it can kill bacteria on its own (if it's the right grade) should make it a good choice a hookah. But it has its own downsides too. So make it out of what everyou want ... but for me their is no going back from 303 stainless steel.
hookah hippie
A lot of hookahs are made with galvanized steel and people claim it is stainless go with either stainless or brass
Bulldog_916
Stainless Steel is the way to go IMO. Less expensive metal. Wont corrode in your lifetime if you keep it clean and dry after smoking.
