I have seen once the other stronger flavour from Nakhla in the Galilee a few years back. Back then, I bought light and didn't like it. Since I've been smoking Zagloul I've found it a great flavour! For sure, don'tput coals on it straight. Smoke it with foil regular. Pack it very lightly which is easy since its dry but coated with molasses. I also have smoked real Iranian tombak which I wet and rinsed once, then twice since its strong! Since some moisture is left, of course you can put coals on that.About the 4 or 5 other Zagloul types, I've been watching the Nakhla website for 8 years, and at least this corner of theMiddle East won't sell it. I tried to call the Nakhla distributor in Gaza not so far from me (as the rocket flys) but as soon as they hear English or Hebrew they hang up. I'm going soon to try some of the towns where both Arabs and Jews live to find. My youngest son learns in a Yeshiva in Ramla Lod so maybe in the market.... or Jerusalem.
