you keep it on the burner long enough to be lit thoroughly i.e. this varies due to the varying size of lump coals

yes, you should flip it, more than just once; the coal should be glowing red all over before you take it off

it depends on the type of wood the coal is made from. personally, i think mesquite lump coals last a pretty long time. some recycled natural hardwood coals go out in less than two minutes.

windcovers aren't my area, i'm not the biggest fan.
