Why is it better having 2-3 coals around the bowl instead of just one coal in the middle?

so does that mean longer sessions too?

Yes. I think 2 would be the universal choice. But my small phunnel requires 3 to smoke to its potential.

depends on the bowl.I smoke a small egyptian conservation bowl 90% of the time.One coal right in the middle smokes perfectly for 30-45 min

Well your question have many different answers depending on bowl, coal brand, and shisha brand.

I use a vortex bowl along with starbuzz, naklah, layalina, and al fakher. In my bowl the holes are on the side of the center. Putting a coal directly on top would translate to "hotter" air directly down the stem opposed to coal being on the sides of the bowl putting less "heat" down the stem, but keeping the bowl temps smokable.

Also the different shisha brands have varying optimal smoking temps. So strategically placing the coals will vary from person to person.
