ih303 Posted November 16, 2009 Share Posted November 16, 2009 Hole pattern makes a difference.The way I see it, in terms of airflow, many small holes = fewer large holes. Kind of like how you can drink just as much soda through 4-5 stir straws as you can with a single normal straw. The difference I find is this, I use natural coals that generally have finer ash. When I use big holes, they tend to clog up with the fine ash. The smaller holes don't seem to have as much of a problem with this.I use a corn-cob skewer which gives me two perfect size holes with every poke and has a friendly yellow handle! On phunnels with all brands except TN Noir, I do a ring around the parameter and then another concentric ring about 0.25" in. With TN Noir, I absolutely riddle the foil with holes. On Egyptian and other traditionally styled bowles, I do three consentric rings of holes.I will note, when our regulars from Saudi Arabia come in, I pack their DA in an Egyptian Bowl and poke holes sporadically with a large skewer.
