I know you've said you're a foodie, so I guess i'm not surprised, cuz I am too....but it's almost scary how similar my response was in my own mind when I read the thread topic...

I love me a good strong blue cheese too.... Gorgonzola to Roquefort!

Roquefort, Brie, Feta......... Anything real and with it's own distinct flavor and character rather than the crappy yellow stuff that frequently passes itself off as cheese here.

My all-time favorite is Lithuanian Farmer's Cheese...slice off a chunk, butter it, salt it and yum

can get it through andrulis farms...I believe they have a website

I grew up on it because my grandmother was 100% Lithuanian

You know you can make mozzarella yourself right? All it requires is a bowl of hot water and the whey. Try it sometime if you haven't. It's amazing.

lol, was at a food show a year ago, and had the worst cheese ever. they were showcasing this synthetic cheese that came out of a tube. same consistency as velveeta, but tasted like death. i told them they need to try again.

There are so many yummy cheeses I can't pick just one:

Havarti
Jalepeno Monetrey Jack
Smoked Gouda
Queso Fresco
Munster
Goat Cheese
Gorganzola
Provel (a St. Louis,Mo original)
Swiss
Fresh real mozzerella
Asadero
Cottage Cheese

That's all I can think of for now.
There is a cheese out there that tastes and looks like carmel, but is imported and expensive. I can't remember the name of it but it's really yummy.

Sounds like heaven to me...
I'd say my favorite "everyday" cheeses would be Havarti, Feta, Pepper jack and sharp(er) chedder. I really like a good brie, esp. baked with apples/cranberries and Dubliner is delicious. I know there are others I'm forgetting
