Favorite Type Of Cheese?

Sounds like heaven to me...
I'd say my favorite "everyday" cheeses would be Havarti, Feta, Pepper jack and sharp(er) chedder. I really like a good brie, esp. baked with apples/cranberries and Dubliner is delicious. I know there are others I'm forgetting

Brie makes a great dessert too. Cover it with brown sugar pushed into the crust, dump fresh pecans (and sprinkle a little brandy if you're so inclined) on top and pop it in the oven for just a couple minutes. Serve with fresh apple and pear slices instead of crackers. Heaven!

Ah that just got me thinking of these apple chips i made a few months ago...soo good. Cut thin apple slices and boiled them in apple juice for a few minutes, took em out to dry between some paper towels and once they weren't soaking wet anymore I sprinkled them with a generous amount of cinnamon, baked em at 350 till crispy and tossed em in some more cinnamon =)...delicious with slices of cheddar

This sounds very tasty. I think I know what kinda snack I'll be making this weekend while watching the Olympics.

Smoked gouda and mizithra cheese.

Mizithra cheese is a goat cheese. It's hard and salty. Tastes super good with spaghetti noodles with browned butter and just shredded on top.
