I'm looking to buy a Persian, Iranian Hookah (Ghalyan, ghelyoon) or whatever the many names for it are.

eBay is your friend when it comes to these, but be aware they tend to be expensive... I can't think of a single online retailer who sells them. I've also never seen one in trades on here.
