Scalliwag Posted August 23, 2006 Share Posted August 23, 2006 I have not thrown an all out party since I have been hookahing (if that is not a word, it oughta be!) The most people I have had over was about 6 for the hookah and not really well planned so it does not count as a party. Now that football season is almost here there will be one about every 3 weeks for the most part and up to 15 to 20 people at some. I am thinking that hookahing during the game will not work. So "Hookah Halftime" sounds good right? I figure we eat before and during the game so no worrying about smoking on an empty stomach. Hotwings, BBQ, and a few things to change up the menu is usually the way it works. I make a pumkin seed crusted tempura fried catfish dipped in a hooter's type wing sauce I am breaking out on them this year that they won't know what hit them... but I digress I take a lot of pride in my parties and I am just wondering how well the hookahs will play for halftime. Obviously hookah etiquite does not apply to football but I hope it fits in. For a lot of my friends the football season is about the only time we get together regularly and most of us get into the games pretty heavy. I'm not real sure the mood will fit. Scalliwag Posted August 23, 2006 Author Share Posted August 23, 2006 A move-in party I know would work because you have your music going and the ladies are pretty evenly into the mix with the guys whereas the girls that hang with us watching the game (one hottie in particular) are usually getting a lot of "those looks" from the womenfolk that are kicked back in the other room chit-chatting (french for shit-talking I think) But ya know they usually are detatched from the game and that's okay. yashman19 Posted August 23, 2006 Share Posted August 23, 2006 Man, that sounds like so much fun :(I smoke hookah while watching any tv, but yeah if you're having a get-to-gether FOR football, things could get scary if you smoke while watching the game, especially if there are hardcore fans in your living room. Just think about an interception. People typically jump up and yell. If you do smoke during the game, be sure the hookah is out of flailing distance :)Other than that, it sounds like a good combination. I make my seasonings and sauces from scratch but the substitutes will suffice. The recpies would be a mile long otherwise. I will make the recipe for four pounds of catfish fillets. If you fillet whole catfish, just end up with 4 pounds of fillets 4lbs. Catfish fillets1- 340gr. package of tempura batter (get from asian market)2 cups cold water1 cup roasted pumpkin seed (sometimes with the spanish spices called "pepitas"2 tbsp. garlic powder2 tbsp. onion powder1/2 tbsp. cayenne pepper16 oz. Louisiana hot sauce1 cup butter1/2 cup flourThis sounds like more work than it really is.Cut the fillets into small pieces for fingerfood. It also gives you more crust surface which is the best part. Heat cooking oil to 400 degrees, I prefer olive or canola in that order. A large deep pan will work, but I prefer a deep fryer. When cooking for parties I use my 30 qt. turkey fryer with a 24 qt. basket so I can shorten cooking time considerably. Anything less that 10 lbs. would be overkill though.In a large bowl mix the tempura batter with two cups of cold water. After that is mixed consistent throw in the cayenne, garlic and onion powder and mix in well. Leave out the hot sauce, butter, pumpkin seed, flour and fish.Put the fish in the bowl, mix them around in it and put in the refrigerator for an hour or so to thicken it up. In a chopper or coffee grinder lightly chop the pumpkin seed, do not powder it.On a cutting board or whatever you cut the fish on, (wipe off first) sprinkle a good heavy layer of flour. Sprinkle pumpkin seed on the flour. Use tongs or whatever and take the catfish nuggets out one at a time and lay them on the the pumpkin seed/flour in a single layer. Sprinkle pumpkin seed on the top.Starting with the biggest chunks put them one at a time in the fryer with tongs. Hold each piece in the grease for a few seconds before dropping it. This makes it fry a little before it hits the bottom and keeps it from sticking as bad to the fryer basket or the other pieces of fish. Having one big clump of fish fried together sucks to break apart without it looking like a butchered turd.The reason you start with the bigger chunks is because they are cooking longer since you are taking a bit of time putting them in the fryer. The smaller pieces take less time. However many you can get in within a couple of minutes you need to let cook in order not to overcook the first pieces ya know? It usually takes about 6 to 8 minutes per batch. While they are cooking take a bowl and put the hotsauce and butter in and nuke it in the microwave until the butter is melted. You will put the catfish from the fryer into the hotsauce mix. Leave a little back if some of your guests do not like it that way. You always have the option of dipping the rest later. I don't know the brand of the tempura batter mix, it has more asian than english writing on it. I shop at several ethnic grocery stores and use a combination of lots of different of each in several of my recipes. A lot of things I just do a twist from the norm. I like using charrazo for example in pizza. I also stuff peppers with charrazo instead of hamburger. I make several different variations of what I call a Tejas Belloburger, where I grill portabello caps flipped bottom side up with different meats, cheeses, quacamole, peppers, etc. You have a cap on the bottom and top and eat it like a hamburger. It even looks a bit like one. Those are really quick and simple and as you can imagine there are so many things to put in them. Grill some of the small salad shrimp and some chopped peppers sometime and throw it in some quacamole and throw some grated cheese blends on top. Really easy and cheap.College kids could eat a lot better on the cheap listening to me. Romma noodles? as a side maybe...The catfish recipe does not fall under that but if you have at least a toaster oven and microwave I have a lot of recipes to fit the bill. Scalliwag Posted August 23, 2006 Author Share Posted August 23, 2006 A very good friend of mine is from McAllen and his Uncle owns 4 shrimp boats and a seafood market in Port Isabella on the gulf. He is going down the 4th of next month and coming back the 8th and hooing us up with a metric shitload of jumbo shrimp and whatever else looks good. Probably red snapper he's thinking. I'm more partial to the pink ones, but that's a whole nutha thing. He is loading up all our ice chests in his Excursion. He says they freeze it and then use dry ice so he can get a lot more in a chest than if they used regular ice. Another relative of his gives me the hookup on my black angus beef. I get a box a month with a bunch of sirloin section (filet mignons, new york strip, sirloin) but that guy is only in Austin so it's not near the drive as the seafood run. So I get that just before my new hookah arrives!!! It's going to be like Christmas except I guess more like Haneka since it is spread out over several days I guess. I like to sit in my living room and smoke hookah while I watch the game with or without a few friends.This last pre-season game I think was AA melon (see review) I also can often been seen watching NASCAR while drinking a beer and puffin the ole hose.Not to mention the site of me chomping on the tip while playing Urban terror, too busy to actually remove the mouthpiece with smoke obscuring myu sniper scope.
