Ok, so I had a little free time today so I decided to try out Scalli's catfish recipe.To keep it short, the fish was amazing. Great texture on the fish and the crispyness of the tempura and pumpkin seed was phenominal. It was great in the hot sauce but I saved a few pieces for dipping in some Filipino fish sauce with soy and pepper and I was blown away! Nice follow up smoke with some Fahker raspberry and the whole experience made my day.I'm going to try out having guests make their own "Tejas Belloburgers" at my next bbq and I'm DEFINATELY going to have a crapload of that catfish.

That is cool. Congrats on the success!!! Glad to hear you did it right. If you like to cook there is a cool little recipe program called "Home Cookin 5.0". It is a really easy to use program that I put all my recipes that are a little too much to try to remember. It even has a feature for pictures. Yes, I have taken pictures of some of my dishes and we are in luck because I happen to have one of the portabllo recipe Also, if you use baby portabellos they make really good finger foods. Don't put a cap on the top side. This pic is the first one I made and did not use a cap on the top. Here is the recipe the way this was made. Since then I have had many variations. One thing that may surprize you is how good quacamole tastes with tuna mixed in it.8 large portabella mushroom caps1 cup grated monterey jack and colby cheese1/4 cup parmesan cheese8oz. can white tuna2 large alvocados1 tbsp season salt1 tbsp roasted pumpkin seed1/2 cup seasoned croutons4 tbsp melted butter1/2 cup beer or wine1 cup salad shrimpLay 8 mushroom caps topside down. Remove any stalk from caps being careful not to tear a hole in the cap. You just don't want the stalk sticking up. Pour 1 tbsp melted butter into each cap.Pour 1 tbsp of beer or wine into each cap.Cut and scoop alvacados into large bowl and beat until smooth with mixer. Mix in tuna. Crush croutons in chopper or blender.Spread mix onto the FOUR caps. Sprinkle parmesan cheese on top.Grill shrimp in garlic butter in skillet and spread over the top (see pic). Sprinkle grated cheese on caps. Sprinkle pumpkin seeds.Sprinkle crushed croutons.Preheat oven to 375 and place caps in greased baking sheet. Bake until cheese is well melted. Remove from oven and place the four empty caps onto the loaded ones.You can also put just a little of your favorite salsa on the top to spark it up a bit too.[img]http://www.scalliwag.com/recipes/HPIM2013.jpg[/img]

Oh, if you like the bisquits at Red Lobster try this. You can also grill some salad shrimp and throw them into the batter and they are the best you've ever had. Some chopped jalepeno peppers give them some serious kick too.This right here will get you some pretty damned close to Red Lobster though. This is another recipe that even a college student can afford. Plus in the morning if you have any left over and some sausage patties and cheese these beat the hell out of a McD's sausage bisquit.2 cups Bisquick baking mix 2/3 cup milk - low fat okay1/2 cup shredded mild cheddar cheese -low fat okay1/4 cup butter OR margarine - melted1/4 tsp. garlic powderparsley flakes - as needed-Combine Bisquick, milk, and cheddar and beat with a wooden spoon for about 30 seconds.-Spoon onto a lightly greased cookie sheet.-Bake in 450 degree oven for 8 - 10 minutes.-Combine butter and garlic powder and pour over hot biscuits; sprinkle with parsley.

We should make a hookah cookbook. You know how they have those books that tell you which wines go with which foods? We should make ones about what shisha goes with which foods and drop in our recipes!Aha, I'm bored.

I think my cookbook will export to html so I will put some on my website for you guys. There are some recipes I've made I don't give out. Just in case I ever decide to get a cafe' ya know? That has always been something I would like to do but my day job has me too busy to deal with that. Plus the day job is damn good so not much motivation right now. But when and if I do I will be reserved to give some recipes to even my own head chef
