agunn1231 Posted August 21, 2012 Share Posted August 21, 2012 I hardly ever ask questions/seek advice or imput...but this seems like a good time to do such a thing. So as some of you know, I have recently started smoking tangiers again after about 8 months not smoking it, well... I decided to bone up on packing and heat management, and was also going off of memory, my first journey back into the tangiers world was with Noir Dark Plum...here's where my troubles started. For the past week when i put on the second round of coals it's harsh as hell, I'm using a small tang phunnel ( the same one I've always used) and 1 and a half coconaras cut into halves. I hadn't run into this issue before, and I'm really puzzled as to where I'm going wrong...but wait, there's more! So i decided to try a different flavor, noir m. Cherry, packed it like i always do, same set up, same amount of heat, and with this flavor it's just fine on the second round of coals... So I'm left to wonder if I was doing something wrong, or if maybe its the particular flavor I was smoking. Any advice folks. Link to comment Share on other sites More sharing options...
IainUM Posted August 21, 2012 Share Posted August 21, 2012 sounds like that batch may be a little wonky. one thing to consider is that for the second round you don't always need the same amount of coals since the bowl is already hot and will hold residual heat that wasn't there when you put the initial set of coals on. i almost always use one coal less on the second round if i don't necro the bowl Link to comment Share on other sites More sharing options...

When you immediately go to the second round of coals, that's the hottest the bowl will be. The bowl is already heated from the last round of charcoal, and then you are putting on a new set of fully sized and fully lit charcoal. Gah, Lain beat me. Try stirring and leaving it in the area that you smoke for about 20 minutes. Then stir and give it the sniff test. If it smells find, then try packing it. Another things that came to mind is that the coals may have changed. Are you using CCN? They seem to be burning hotter now compared to a year ago. [/quote] i did let it acclimate for about 20-30 min, i am using ccn, as its easiest to get around here for a good price, i also have some GCs sitting around, might try them....taking a break from dark plum for a bit, but i think im going to try ccns cut into 1/4ths next time with it and see what happens. it also crossed my mind that the coals may have changed, or that the local shop is carrying the wonky ccns again.
