Mostly it's hear-say or extrapolated from discussions/conversations. No manufacturer, especially Eric, gives away any real concrete details. Nor should they unless they're actively looking to set up more competition.

I don't want anyone to think Eric uses paste based flavors versus oil based versus water based, etc. It was simply a way to explain what he'd explained to me about his flavors and his keying his production method to the flavor he chose to use (brand, etc.). Put two different brands of oil based flavoring together and you're still going to have some difference between the two formulas. Think vanilla extract. All are technically produced in similar ways, all are alcohol based, but any baker knows the flavor itself varies, sometimes dramatically, from one brand to another.
